Pie will keep us together

Chocolate Chip Cheesecake

Yes. I know it's called a "Cheese-cake", but this one is maybe 3/4" high, tops. It's a pie, damnit, and I'll fight anyone here who says different!

Ingredients:

Crust:
1-1/2 cups chocolate chip cookie crumbs
3 tbsp. melted margarine
3 tbsp. sugar

Filling:
2 eight ounce packages of cream cheese (softened)
3/4 cup sugar
1/3 cup cocoa
1 tsp. vanilla
2 eggs

Topping:
1 cup sour cream
2 tbsp. sugar
1 tsp. vanilla

Instructions

For crust: Combine cookie crumbs, margarine and sugar. Press in the bottom and about 1/2" up the sides of a 9 inch spring-form pan.

For filling: Mix cream cheese with sugar and cocoa in a small bowl, using an electric mixer. Beat until light & fluffy. Add vanilla and eggs. Beat thoroughly. Pour mixture into prepared pan. Bake at 375 degrees for 30 minutes. Cool on a cake rack for 15 minutes.

For topping: Blend sour cream, sugar and vanilla. Spread over baked filling. Bake at 425 degrees for an additional 10 minutes.

Cool before removing rim of springform pan. Garnish with shaved chocolate, if you're into that sort of thing.

And, to hearken back to a simpler time, listen to the dulcet sounds of "Super Freak."

Oh, Mongo. You're not a true blogger until Ubermilf makes you cry.

I really, really enjoy pie.

So, the margerine in the crust? Does margerine work or taste better in that application, or are you just saving me from ingesting more dairy?
